I’m not a vegan or anything like that just a vegetarian.
What are some good meals besides something plain and simple like a salad?

    Vegetarian Lasagna

    1 (16 ounce) can diced tomatoes
    1 (16 ounce) package instant lasagna noodles
    1 bunch fresh spinach, washed and chopped
    2 large carrots, shredded
    2 large zucchini, diced
    2 summer squash, diced
    1 large eggplant, diced
    1 large head broccoli, cut into florets
    2 teaspoons dried oregano
    salt and pepper to taste
    1 cup shredded mozzarella cheese (optional)
    1 cup ricotta cheese (optional)

    Preheat oven to 375 degrees F (190 degrees C). Lightly grease one 9×13 inch baking dish.
    Place a layer of tomatoes in the bottom of the baking dish, followed by a layer of noodles, spinach, carrots, zucchini, summer squash, eggplant and broccoli. Season to taste with oregano, salt and pepper. Repeat layering of ingredients until all are used up. If using cheeses sprinkle over broccoli layers and on top of dish.
    Bake at 375 degrees F (190 degrees C) for 25 to 35 minutes

    Slow Cooker Vegetarian Chili

    1 (19 ounce) can black bean soup
    1 (15 ounce) can kidney beans, rinsed and drained
    1 (15 ounce) can garbanzo beans, rinsed and drained
    1 (16 ounce) can vegetarian baked beans
    1 (14.5 ounce) can chopped tomatoes in puree
    1 (15 ounce) can whole kernel corn, drained
    1 onion, chopped
    1 green bell pepper, chopped
    2 stalks celery, chopped
    2 cloves garlic, chopped
    1 tablespoon chili powder, or to taste
    1 tablespoon dried parsley
    1 tablespoon dried oregano
    1 tablespoon dried basil

    In a slow cooker, combine black bean soup, kidney beans, garbanzo beans, baked beans, tomatoes, corn, onion, bell pepper and celery. Season with garlic, chili powder, parsley, oregano and basil. Cook for at least two hours on High.

    Unsloppy Joes

    1 tablespoon olive oil
    1/2 cup chopped onion
    1/2 cup chopped celery
    1/2 cup chopped carrots
    1/2 cup chopped green bell pepper
    1 clove garlic, minced
    1 (14.5 ounce) can diced tomatoes
    1 1/2 tablespoons chili powder
    1 tablespoon tomato paste
    1 tablespoon distilled white vinegar
    1 teaspoon ground black pepper
    1 (15 ounce) can kidney beans, drained and rinsed
    8 kaiser rolls

    Heat olive oil in a large skillet over medium heat. Add onion, celery, carrot, green pepper, and garlic: saute until tender. Stir in tomatoes, chili powder, tomato paste, vinegar, and pepper. Cover, reduce heat, and simmer 10 minutes.
    Stir in kidney beans, and cook an additional 5 minutes.
    Cut a 1/4 inch slice off the top of each kaiser roll; set aside. Hollow out the center of each roll, leaving about 1/2 inch thick shells; reserve the inside of rolls for other uses.
    Spoon bean mixture evenly into rolls and replace tops. Serve immediately.

    Grilled Mediterranean Vegetable Sandwich

    1 eggplant, sliced into strips
    2 red bell peppers
    2 tablespoons olive oil, divided
    2 portobello mushrooms, sliced
    3 cloves garlic, crushed
    4 tablespoons mayonnaise
    1 (1 pound) loaf focaccia bread

    Preheat oven to 400 degrees F (200 degrees C).
    Brush eggplant and red bell peppers with 1 tablespoon olive oil; use more if necessary, depending on sizes of vegetables. Place on a baking sheet and roast in preheated oven. Roast eggplant until tender, about 25 minutes; roast peppers until blackened. Remove from oven and set aside to cool.
    Meanwhile, heat 1 tablespoon olive oil and saute mushrooms until tender. Stir crushed garlic into mayonnaise. Slice focaccia in half lengthwise. Spread mayonnaise mixture on one or both halves.
    Peel cooled peppers, core and slice. Arrange eggplant, peppers and mushrooms on focaccia. Wrap sandwich in plastic wrap; place a cutting board on top of it and weight it down with some canned foods. Allow sandwich to sit for 2 hours before slicing and serving.

    I wonder, how many vegetarians actually eat salads?

    I’d say everything that is vegetarian is delicious.
    My favorites have to be Mexican dishes like burritos, tacos, and haystacks. (All with beans instead of meat.)
    You should check out Indian dishes, like curry (careful though, unless you know what you’re doing, cooking with curry can turn into a mess because it’s so hot).
