    Basically, multi-grain, high fiber carbohydrate sources are low glycemic index foods because they take longer to go through the digestive tract and are absorbed more slowly into the bloodstream. Sweetened foods or foods like white bread are absorbed much more quickly and therefore have a much higher glycemic number. The number is determined by the rise in blood sugar a given amount of time after consumption.
