    make a salad and add some grilled chicken or lean steak.
    Any sort of soup
    chicken and salad
    stir fry
    pasta with a red sauce

    I like to fix salads and quickly cook chicken with some pepper and lemon and then chop the chicken and throw on top of the salad while still warm.

    Also good is seasoned and baked portabella mushrooms. I like them with a seven grain rice mix. They’re awesome.

    I also like to do a quick stir fry with chicken breast, cut up, celery, carrots with a simple sauce with soy sauce, garlic and some sesame oil. I serve it with steamed rice.

    Another good thing I like to keep on hand is bags of frozen edamame (soybeans). You can steam them quickly in your microwave and serve them as a veggie that kids will love.

    In spring, it’s nice to bake a simple white fish (your choice) with some good olive oil, chopped fresh tomatoes, basil and garlic.
