Books on organic eating and low glycemic index foods?

Question by surfer_doc: Books on organic eating and low glycemic index foods?
My husband and I are trying to switch to an organic diet as well as trying to stay away from high glycemic index foods. Does anyone know of a good book that contains unbiased information on both of these topics?

What to Eat by marion nestle, i read it for my human nutrition class, it gives a lot of good info about organic food and nutrition. its all the same basic info…organic food is grown without the use of pesticides, herbicides, insectisides, its not significantly more healthy for you, but its much better for the environment so its a good thing to support. high glycemic foods spike your blood sugar levels, they are foods like white bread and white rice, basically any refined food. what makes a food low glycemic is the fiber which slows down the absorption of sugar into the blood stream, foods like fruits and veggies, whole wheat/grain bread and brown rice are low glycemic.
