Question by : Anyone have any simple healthy cooking recipes?
I’m trying to encourage my dad to cook more healthy meals. We made a delicious paella yesterday which went down well. Does anybody have any EASY, cheap recipes which use vegetables as the main ingredients, or is low in fat and calories and tastes really good?

That is a recipe for Skillet Pork with Pineapple Salsa. My dad is diabetic, so it fits all the healthy requirements. My family was talking about that one for a long time, and it was SUPER easy. If you use pork loin instead of chops make sure to trim the fat to keep it healthy. And if pineapple or pork isn’t your thing, try surfing that site for some others under the Cooking Light section. It’s really good!! You can even save recipes and create little menus, out of which it makes a shopping list for you.

One great recipe that I tried when I was trying to eat healthier was for Pad Thai. Here’s the video that I found for it:

You might want to try an easy chili recipe. I like to make these chili recipes

Most people do not realize how low fat, low calorie chili can be. For the beef recipes I substitute ground turkey or cut up chicken to make it even healthier.
Another trick I use is to just add some frozen and/or fresh veggies to the chili. I use the frozen soup veggie or add whatever I have on hand.
Chili freezes very well so it is easy to put in the freezer and take out when you need it
