Zuzka!! I tried this last night because i could FINALLY find real zuchinnis
in Mexico (we have a different type of zuchinnis and the flavor isn’t
exactly the same), and let me tell you i was blown away!! it’s so
delicious!! I have trouble eating greens but this dish is amazing! Love it.

Thank you for the recipe Zuzka! And yes, I understand about getting older
and not being able to splurge or “cheat” anymore. I am 33 and had a child
3 years ago and nothing has been the same since. 🙂 Any ideas if I can use
another green veggie instead of the parsley? Do you think spinach would
work as well?

Hey Zuska, I really enjoyed this one. Also added a bit of chopped tomatoes
to the mix and then blue cheese near the end. Like the slight crunchiness
of the “pasta”. Thanks!

ooh and i have a question..what do you recommend to eat as a snack after
workout? i’m usually done with workout around 10 or 11 am, it’s too early
for me to have a proper lunch and i already had my breakfast so i usually
don’t have any idea what to eat at that time after workout..help! 🙂
