Cooking the chicken in a sauce then cooking the rice separate is how my
Puerto Rican cousin cooks it, then you pour the chicken and sauce over the
rice. mmm.

I’m saying that, ‘arroz con pollo’, and just as well be plain rice and a
leg of chicken on the side, because that’s all it means, literally. And
well, saffron? lol, people usually use plain annatto. Also, that it is
wrong to call this dish ‘Spanish’, much like it is wrong to call BBQ Ribs
‘English’.

This looks amazing!! But we make it by essentially frying the rice then
adding water to the pan, adding spices and letting it simmer down, add more
water, simmer down, ect till tender add chicken 🙂 my grandma (from mexico)
makes it like that, her mom, my mom, but everyone is different , to each
their own 🙂

I also eat this, but the chicken I make has no skin, and then I chop them
into smaller bits and cook them. I make the rice seperatly.
